Eggplant Parmigiana

Parmiggiana di melanzane e pomodori semisecchi (semi dried) freschi di Pomup

INGREDIENTS

100gr bread crumbs
2/3 eggplants
150gr of PomUp
50gr of cooked ham
50gr of Grana Padano cheese
Salt to taste
Pepper as needed
2 eggs
2 mozzarelle

METHOD

Start to cut the aubergines into not to thick slices. In a container beat the eggs, add a pinch of salt, dip the freshly cut aubergines and pass them in the breadcrumbs creating a thin breading. Now proceed by layers: aubergine, PomUp (shredded), ham, sliced mozzarella and a sprinkling of Grana Padano cheese, then again the aubergine and so on for at least 5 layers. Bake at 180° for about 20 minutes and serve hot. For those with a sweet tooth, we also recommend frying the eggplant after cutting it.
