Pennette with PomUp ‘Nduja

Pennette all' nduja e pomodori semisecchi (semi dried) freschi di Pomup

INGREDIENTS

600gr of Penne rigate pasta
Chilli pepper
400gr cow’s milk ricotta cheese
Fresh artisanal salami
300gr of PomUp

METHOD

Start by preparing the PomUp ‘Nduja. Peel the salami completely, cut it into chunks and blend it with the whole chilli pepper using a food processor until the mixture is homogeneous. Repeat the same step with PomUp without reducing it to a too fine grain. In a bowl, combine the two compounds and mix them homogeneously. Meanwhile, cook the penne, once drained mix them in the pot with the ‘nduja and serve on a bed of freshly blended ricotta cheese.
