PomUp Arancino with sausage and provola

INGREDIENTS

400 gr of arancini rice
150 gr PomUp
250 gr of Provola from Ragusa
250 gr sausage
Turmeric
Vegetable broth

METHOD

Boil some water with a vegetable cube and cook the rice there. Once cooked, drain it and add a pinch of turmeric which will give the rice a yellow color and a particular scent. Cut the PomUp and the fresh provolone into cubes, gut the sausage and and blanch it. Now, with the help of an “arancinotto” or “arancini maker” (an arancino shaped tool used in Sicily) form the Arancine, pass them in the breadcrumbs and fry them. If you’re a low calorie cuisine lovers they are also excellent in the oven. Serve hot.
