Tagliatelle e pomodori semisecchi (semi dried) freschi di Pomup

INGREDIENTS

200 gr. of flour 00
50 gr di spinach
100 gr of PomUp
2 eggs
150 gr ricotta cheese
salt to taste
pepe to taste

METHOD

Chop the spinach leaves together with the flour, add the two eggs and knead until a homogeneous mixture is obtained. Let the pasta rest in the fridge for at least 30 minutes. Divide the mixture into two parts and roll out the dough very thinly, at this point, using the pasta machine, cut into the shape of a noodle. Prepare a mixture by combining the ricotta with the finely chopped pieces of PomUp, add a little cooking water to the mixture and mix to obtain a cream. Cook the noodles in boiling water and then toss in a pan with the cream obtained. Serve and garnish with a few pieces of PomUp and a few flakes of ricotta.
