The Semi-Dried Tomato

The fresh Semi-Dried Tomato, is only Pomup
Much more than a tomato, ours is the only fresh semi-dry tomato with a new and surprising taste!
To achieve this, we have worked and experimented with dedication and passion for over twenty years, we have chosen the best raw materials and perfected the manufacturing processes.
Fresh tomato by choice, good by tradition: how Pomup was born
Pomup is not pasteurized, so it retains its bright red color and a more authentic flavor than dried tomatoes. Sweetness, delicate flavor and a meaty and pulpy texture are the main characteristics that give it an amazing flavor from the first bite!
We select only the best tomatoes and, thanks to cutting-edge dehydration machines and ovens, we delicately process them so that they become crunchy on the outside, sweet and soft on the inside.

The Processof Processing

Our tomatoes are grown in greenhouses (this way we can constantly monitor the plant and especially the fruit throughout the entire processing cycle), using a natural method through bee pollination and without any chemical products to guarantee the highest quality of the raw material. We harvest by hand and carry out an accurate selection: only a smooth round tomato rich in pulp can become a Pomup!
The selection is divided into four phases: in the field, where we choose the bunches with medium-sized fruits; in the company, when we evaluate size, ripeness and consistency; finally, during cutting and before packaging.
Careful quality controls allow us to select the tomato based on specific characteristics, so as to obtain crispy slices with a typical intense red color that we then wash and disinfect.

We cut the tomato into 6-8 wedges using a cutter and then salt it.
We immerse the tomato in a large oven at a low temperature to complete the slow semi-dehydration process that lasts between 10 and 12 hours, during which it tends to slowly expel only the excess water. The tomato “sweats” without causing alterations to its characteristics, namely flavor and color. The result? A soft, juicy and sweet pulp, but also an extraordinary crunchiness.

We’re almost there! We add oregano, garlic and sunflower seed oil (the only preservative used to avoid altering the taste and organoleptic properties), then we place the product in the packaging machine that concludes the process with heat-sealing. The jar of Pomup is ready to be shipped and enjoyed in a thousand different ways!
…and then?
To preserve it, just keep it in the fridge and, once opened, cover it with seed oil to preserve its freshness, and consume it within a few days: resisting its goodness will be impossible!
